Brie careful; this cheese might change your life!
Calkins Creamery’s on-farm cellar provides the perfect microclimate for this baby brie to develop an earthy aroma. The flavor of the mild Holstein cow milk is expressed in a tangy sour cream center and a pleasant mushroom flavor in the rind. A soft-ripened cheese, Noblette ages from the outside to the center of the wheel which results in a “bloomy rind” that is velvety soft and edible. The mini wheels reach maturity around 4-6 weeks, developing a buttery flavor and wet cave-stone flavor on the rind as it nears the 6 week mark.
Cut it in slices like a pie so each guest can enjoy a wedge! This cheese will pair well with fig or cranberry jams and dried apricots.
A cheese of celebration, a bubbly white wine like champagne or a dry hard cider will be a joyful pairing. For beer lovers, match Noblette’s earthy vegetal flavor with a hopped-up IPA.

Since 1841, the Bryant family has operated Highland Farm, on 250+ acres in Northeast Pennsylvania. Currently, the father Bill and son Zach manage the grazing program for their registered herd of Holstein cows (the black and white moo-moos’).
In 2006, daughter Emily returned to the farm to establish a small cheesemaking operation that became Calkins Creamery. Currently, Emily and her team of talented cheesemakers converts her family's grass-fed milk into multiple varieties of farmstead and artisan cheeses.
