I wish I could say starting a business is easy but there is a steep learning curve. Thank you to my customers for your support! I've met many wonderful cheese lovers over the past 365 days. Your interest in and passion for cheese is inspiring. It keeps me motivated to learn and grow.

Also, big thank you to the Pennsylvania cheesemakers that I work with - I have so much respect for your skills!

The shop at @beemansbakedgoods will be closed for a few weeks and reopen on Jan. 18. I plan to rest and work on some exciting ideas for the coming year. See you in a few weeks!

The best part of vacation is visiting local cheese shops!

We stopped at @saycheeselosangeles yesterday to pick up a selection of cheese, crackers and jams.

This was the perfect easy mid-afternoon meal after a morning of coastal exploring! We kept it simple with the fruit and went big on cheese. We enjoyed Beecher's Flagship cheddar, Humboldt Fog and a brie whose name I can't remember. The fog was all for me - no other goat cheese fans were in the room.

Hiking is one of my favorite things (besides eating cheese!) and I hear "you haven't hiked until you've hiked in El-Aay." So I'm headed to the west coast for a week to visit family, get my hike on and hopefully eat some cheese!

Next weekend marks the start of summer! Memorial Day was always one of my favorite holidays when I was a child.

If you didn't know, my mom started a bakery the year before I was born. On Memorial Day mondays, everyone started working super early and hustled to finish the work. The reward was getting to #villagepark before noon for a big celebration with friends and family and a ton of delicious food.

I would spend the day watching everyone play a serious game of baseball. The one time I did play in the position of catcher, I was plowed over between 3rd base base and home but I tagged out my runner. 🥴

I hope you enjoy these photos from 1988. That's my grandfather on the pitcher's mound and preschool-me on the back of the bleachers enjoying a popsicle.

So much misplaced hate for blue cheese!

Blue cheese has a pungent aroma and sharp, salty flavor, courtesy of the penicillin roqueforti mold. It may be an acquired taste but I urge you to try some #pennsylvaniabluecheese soon. There's an added deep flavor, similar to roast beef, to accompany the sharpness which helps bring balance.

If you haven't met Der Edel Bleu from Goot Essa, it's a great first blue cheese. This cheese is made with a cheddar base and a proprietary mix of blue molds that gives the cheese a familiar texture and a more mild sharpness.

When this cheese arrived, I immediately cut into it! I've confiscated 2 wedges for myself and I've been using it in everything I cook.

Jack cheese is one of the few cheese recipes that originated in the U.S. which may be why we're so familiar with this mildly flavored and somewhat sweet style of cheese.

Gridley Hollow, made in the Allegheny Mountains of God's Country, is an alpine style cheese with beautiful melt-ability, fruity aroma and grassy yet buttery flavor.

I'm often asked, "What kind of cheese can I substitute for gruyere in this recipe?"

Gruyere is made primarily in the Swiss and French Alps. Because of the method used to make it, it falls into the "alpine cheese" category. Alpine cheeses start with raw cows milk which is cooked to a relatively high temperature then pressed into a large wheel (think >20lbs). This process allows for cheeses that age longer and tolerate travel better than softer cheeses. Alpine cheeses are usually firm with "eyes" ranging in size, taste mildly salty and melt perfectly.

Meet Cherub Rock, the cheese that inspired this post. I swear every time I walk into the shop, I can hear it wailing, "Let me Ooooouuut!"

Cherub Rock could be compared to Drunken Goat if you need a reference but please, respect it for what it is; a delicate well-balanced Pennsylvania goat cheese. If you allow it to come to room temperature, you'll catch fruity notes from the red wine in the rind.

Give this cheese some love and watch it shine like the rock star that it is! Available at 51 S Orange St. in Carlisle.

I'm not planning to become a full-time cheesemaker

I'm not planning to become a full-time cheesemaker but on a recent trip to Ireland, I signed up for a raw milk cheesemaking class with Silke Cropp from @corleggycheeses.

Corleggy cheeses are made with raw milk still warm from the body heat of the animal that produced it. We were using chilled raw milk so our first step was slowly heating it up to 32° C. Then we used a yogurt with live cultures to acidify the milk and a thistle rennet to set the curd.

After giving the curd time to set, Silke showed us how to test if the curd was ready and the direction of the cuts. I was most nervous about this step because if you cut it too soon, the protein solids that make the curd is lost to the whey.

Also, the size of your curd helps determines the type of cheese you make. I was fairly determined to make a hard cheese so I was cutting smaller curds because I needed as much whey to drain as possible.

I had to travel back home with the newly formed wheel in my luggage. It made it and all my clothes were soaked with whey but that's a separate topic! 😁

I've read about cheesemaking in books and have had several Pennsylvania cheesemakers explain their process but I can appreciate so much more since I made it with my own hands. I have 6 pages of notes and hopefully some of the wisdom Silke shared will stick for when I try this again.
