We know it's challenging to choose cheese when we carry such a wide selection. Here are our top 3 recommendations for your Thanksgiving cheese board!

1) Autumn's Appletizer is a seasonal offering from @clovercreekcheese in Blair County. This smooth, creamy cheddar delivers a burst of fall flavor from dried apples, cinnamon, and other spices.

2) Our make very own Beer Cheese Spread from 4 Pennsylvania cheeses and @desperate.times.brewing German-Style Weizen. This full flavored spread with a rustic texture pairs great with hard sourdough pretzels and sweet bologna. Or melt it for a beer fondue experience to dip apples and other snacks!

3) It's not Thanksgiving without cranberries and this firm cheddar from @jubileeheritagecheese is dressed for the season! The dried cranberries provide texture and a hint of sharp fruit flavor.

We're open special hours on Tuesday, Nov. 21 (11-6pm) and regular hours Wednesday, then closed Thursday for Thanksgiving. We'll resume regular hours on Friday (11-6pm) and Saturday (10-5pm).

We have our second Paint and Pizza Night scheduled for this Friday, November 17th!

From 6-9 pm, @lameocal will guide you through painting a harvest theme design on multi-layer pre-cut MDF. Don't worry - it's OK if you think you're not creative! The layers provide a framework and your inner artist WILL make an appearance.

You'll be treated to 4 different flavors of pizza as you paint. Each flavor will use local cheese sold at Central Wedge to give it that extra flavor. We're really excited about the bresaola and mustard pizza!

Tickets are available in the 'Shop' tab at centralwedgecheese.com. All art supplies are provided, and your ticket includes the pizza. BYOB.

Guided pairings and tastings are one of my job "responsibilities" that's the most fun! We do our best to find diverse, enjoyable pairings so everyone will find something that they like.

Once the table is set for a pairing, there's anticipation as we wait for everyone to arrive that feels a little bit like Thanksgiving morning to me. It's a feeling of comfort and celebration, knowing the room will soon be full of people who get as excited about food and drink as we do! Today, we had a very engaged crowd @big_hill_taphouse for our hard cider and cheese pairing - we hope everyone enjoyed it!

I had the honor of creating several grazing boards

I had the honor of creating several grazing boards for an Air Force retirement party in early October.

Since the party was at a winery, it made sense to have a board of cheeses that paired with red wines and one that paired with white wines. The third board was inspired by snacks served at a traditional Pennsylvania Dutch gathering. Choosing themes for custom grazing boards is such fun for me!

The guests must have had fun too because there was very little to clean up!

This batch of Cherub Rock from @grass.milk.curd has the same great taste and a more firm texture. The rind is marinated with a big-bodied Spanish red wine, which pairs with the naturally musky flavor of a goat milk cheese.

Have you tried sheep milk cheese yet?

The flavor of cheese is largely determined by the fat and protein in milk, and sheep milk is higher in fat and protein than cow or goat milk. Thus, the flavor of sheep milk cheese will be richer and creamier with a distinct depth of flavor and hint of sweetness. It's also more common to find goat and cow milk cheese in Pennsylvania, so when I do find a cheese made from sheep milk, I celebrate!

The pictured cheese is MarkJego, a Manchego style cheese made by @raspberryridgecreamery in Northampton County, Pa. Originally hailing from the La Mancha region of Spain, this style of cheese is crafted from 100% sheep's milk. This local version yields an intensely rich experience with a distinct nutty flavor, firm yet crumbly texture and a hint of salt on the finish. The rind of this cheese is rubbed with olive oil as it ages, which contributes a rich mouthfeel.

Why am I telling you about it today? This is the last wheel I'll have vailable until next spring.

🍺 + 🧀 is a great combination so we made some beer cheese spread to celebrate! And you know we love a reason to celebrate.

We used sharp cheddar, barleywine-washed cheddar, horseradish and mustard cheddar and cup cheese (yes, cup cheese!) with German-Style Weizen from @desperate.times.brewing. 🤤

Buy a single or shareable PA Dutch grazing board during Oktoberfest (Sept. 16-Oct 3) and we'll add a serving of the spread for you to try! It's also available in 4 and 8 oz containers for purchase.

The weeks are flying by so fast! The cheese shop has only been open for 5 months but I feel like we've been through 6 different seasons. Things are shaping up to match my dreams. Slowly, but it is happening.

Fortunately, two things haven't changed; 1) We still focus on only sourcing and selling delicious Pennsylvania made cheeses and 2) Occasionally, I get to visit farmers and cheesemakers!
